This statement therefore indicates the preparation of all the material necessary for a correct table service. It is usually carried out before the arrival of the customers and if performed with care, it guarantees a smooth service. It was created with the aim of making these moments perfect and pleasant, moments in which everything is arranged according to a certain predetermined order and considered optimal for the occasion. The main objective is to make the guests feel comfortable. The environment must be comfortable, welcoming and everything must be in place. Finally, it presupposes not only a targeted arrangement of cutlery and glasses, but also the optimization of space. A proper mise en place will have to reflect the atmosphere of the moment.
